Instructions
Mix 4 tbsp peanut butter, 2 tbsp red curry paste, 2 cans coconut milk, 2 cups chicken broth, 2 tbsp fish sauce and 2 tbsp honey in the crockpot.
Cut 2 1/2 lbs chicken thighs.
Slice 1 red bell pepper.
Slice 1 red onion.
Chop 2 carrots.
Add chicken thighs, red bell pepper, red onion, carrots and 4 tsp ginger to the crockpot.
Cook on low for 8 hours.
Shred chicken.
