Instructions
Dice 1 red onion.
Thinly slice 3 celery stalks.
Saute red onion and celery over medium-high heat for 8 minutes.
Add mushrooms.
Saute for an additional 6 minutes.
Mix 2 1/2 cup brown or wild rice and 5 1/2 cup chicken broth in slow cooker.
Add sauteed vegetables.
Cook on low for 5 to 6 hours.
Turn off slow cooker.
Mix in 2/3 cup cranberries, 1 tbsp rosemary, 1 tbsp thyme and 1/2 cup slivered almonds.
Cover and let stand for 10 minutes.
