Instructions
Chicken
Preheat oven to 400.
Pat dry the chicken.
Cut the chicken into bite sized pieces.
Whisk 3 tbsp whole grain mustard, 2 tbsp soy sauce and pepper in a bowl.
Mix chicken and sauce.
Veggies
Peel 2 sweet potatoes.
Dice 2 sweet potatoes, 1 red onion, 3 carrots and 3 celery stalks.
Cover a roasting pan. with aluminum foil.
Mix vegetables, 3 tbsp olive oil, 1 tbsp dried thyme, 1 tbsp dried rosemary and salt & pepper to taste.
Add chicken to veggie pan.
Cook for 30 - 40 minutes.
