Instructions
Crumb Topping
Whisk 1/2 cup flour, 1/2 cup sugar and 1 tsp cinnamon.
Add 1/4 cup melted butter.
Mix with a fork until crumbs form.
Chill in the refrigerator.
Blueberry Muffins
Preheat oven to 375.
Whisk 1 1/2 cup flour, 3/4 cup sugar, 2 tsp baking powder, 1/4 tsp salt, lemon zest and orange zest.
In a separate bowl, mix 1 egg, 2/3 cup buttermilk and 1/3 cup melted butter. (It's okay if it looks lumpy)
Add the wet ingredients to the dry. (Do not overstir)
Fold 2 cups of blueberries into the mix.
Insert 12 muffin liners into muffin tin.
Spread mix evenly into 12 muffin liners.
Sprinkle crumbs on top.
Bake for 28 minutes
Cool for 30 minutes before serving.
