Slice the chicken, red onion, red bell pepper and orange bell pepper.
Dice the pineapple.
Combine the chicken, red onion, red bell pepper, orange bell pepper, pineapple, 2 tbsp soy sauce, 1 tbsp honey, 2 tsp olive oil, 2 tsp rice vinegar, 2 tsp minced garlic, 1 tsp ginger, 1/2 tsp salt and 1/4 tsp black pepper in a casserole dish.
Bake for 20 minutes.
Optional: Serve with coconut rice and shredded coconut on top.
