Sweet Potato Brownies

Ingredients

  • 1 1/2 cup mashed sweet potatoes
  • 2 eggs
  • 1/2 cup cocoa powder
  • 1/2 cup almond flour
  • 1/2 cup monkfruit sweetner
  • 1/4 cup coconut milk
  • 2 tbsp chocolate chips
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350.
  • Mash 1 1/2 cup baked sweet potatoes until creamy.
  • Mix 2 eggs and 1/4 cup coconut milk into sweet potatoes until well combined.
  • Mix 1/2 cup cocoa powder, 1/2 cup almond flour, 1/2 cup monkfruit sweetener, 2 tsp vanilla extract, 1 tsp salt and 1 tsp baking powder until incorporated.
  • Fold in 2 tbsp chocolate chips.
  • Transfer to a 8 x8 baking dish.
  • Bake for 38 minutes.
  • Turn off oven.
  • Crack oven door to cool for 30 minutes.
  • Store in the refrigerator.
