Sweet Potato Brownies
Ingredients
- 1 1/2 cup mashed sweet potatoes
- 2 eggs
- 1/2 cup cocoa powder
- 1/2 cup almond flour
- 1/2 cup monkfruit sweetner
- 1/4 cup coconut milk
- 2 tbsp chocolate chips
- 2 tsp vanilla extract
- 1 tsp salt
- 1 tsp baking powder
Instructions
- Preheat oven to 350.
- Mash 1 1/2 cup baked sweet potatoes until creamy.
- Mix 2 eggs and 1/4 cup coconut milk into sweet potatoes until well combined.
- Mix 1/2 cup cocoa powder, 1/2 cup almond flour, 1/2 cup monkfruit sweetener, 2 tsp vanilla extract, 1 tsp salt and 1 tsp baking powder until incorporated.
- Fold in 2 tbsp chocolate chips.
- Transfer to a 8 x8 baking dish.
- Bake for 38 minutes.
- Turn off oven.
- Crack oven door to cool for 30 minutes.
- Store in the refrigerator.
