Mustard Chicken & Veggies
Ingredients
- 2 lbs boneless chicken thighs
- 2 sweet potatoes
- 1 red onion
- 3 carrots
- 3 celery stalks
- 3 tbsp whole grain mustard
- 3 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp dried thyme
- 1 tbsp dried rosemary
- salt
- pepper
Instructions
Chicken
- Preheat oven to 400.
- Pat dry the chicken.
- Cut the chicken into bite sized pieces.
- Whisk 3 tbsp whole grain mustard, 2 tbsp soy sauce and pepper in a bowl.
- Mix chicken and sauce.
Veggies
- Peel 2 sweet potatoes.
- Dice 2 sweet potatoes, 1 red onion, 3 carrots and 3 celery stalks.
- Cover a roasting pan. with aluminum foil.
- Mix vegetables, 3 tbsp olive oil, 1 tbsp dried thyme, 1 tbsp dried rosemary and salt & pepper to taste.
- Add chicken to veggie pan.
- Cook for 30 – 40 minutes.
