Rice Stuffing

Rice Stuffing

Cook Time 5 hours

Ingredients

  • 1 red onion
  • 3 celery stalks
  • 16 oz baby bella mushrooms
  • 2 1/2 cup brown or wild rice
  • 5 1/2 cup chicken broth
  • 2/3 cup cranberries
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 1/2 cup slivered almonds

Instructions

  • Dice 1 red onion.
  • Thinly slice 3 celery stalks.
  • Saute red onion and celery over medium-high heat for 8 minutes.
  • Add mushrooms.
  • Saute for an additional 6 minutes.
  • Mix 2 1/2 cup brown or wild rice and 5 1/2 cup chicken broth in slow cooker.
  • Add sauteed vegetables.
  • Cook on low for 5 to 6 hours.
  • Turn off slow cooker.
  • Mix in 2/3 cup cranberries, 1 tbsp rosemary, 1 tbsp thyme and 1/2 cup slivered almonds.
  • Cover and let stand for 10 minutes.
