Pasta E Fagioli

Ingredients

  • 1 1/2 lbs ground meat
  • 1 red onion
  • 1 tbsp minced garlic
  • 2 celery sticks
  • 2 carrots
  • 14.5 oz can diced tomatoes
  • 15 oz can red kidney beans
  • 15 oz can great northern beans
  • 1 cup tomato sauce
  • 1 1/2 cup beef broth
  • 4 tsp white wine vinegar
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 oz pasta optional

Instructions

  • Brown 1 1/2 lbs ground beef in a large saucepot.
  • Dice red onion.
  • Chop 2 celery sticks.
  • Chop 2 carrots.
  • Saute vegetables and 1 tbsp minced garlic with the cooked beef for 12 minutes.
  • Drain the red kidney beans and great northern beans.
  • Add can diced tomatoes, red kidney beans, great northern beans, 1 cup tomato sauce, 1 1/2 cup beef broth, 4 tsp white wine vinegar, 1 tsp basil, 1 tsp oregano, 1 tsp thyme, 1 tsp salt and 1/2 tsp black pepper into the pot.
  • Simmer for 30 minutes.
  • Serve with pasta and parmesan cheese.
