Shrimp Scampi

Ingredients

  • 1 lb shrimp peeled and deveined
  • 1 whole lemon for the juice
  • 1/2 cup dry white wine
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves minced garlic
  • 1 tsp kosher salt
  • 1 tsp black pepper

Instructions

  • Heat skillet with 2 tbsp butter and 1 tbsp olive oil on medium-high.
  • Add 2 tbsp minced garlic and cook for 1 minute
  • Season the shrimp with 1 tsp kosher salt & 1 tsp black pepper.
  • Cook shrimp till they turn pink (3 to 5 minutes depending on size)
  • Remove shrimp from the pan (leave butter and oil in the pan).
  • Boil 1/2 cup dry white wine and 1 lemon juice in the skillet.
  • Return the shrimp to the pan.
  • Mix all ingredients.
  • Serve over pasta or by itself.
