Blueberry Muffins

Ingredients

Crumb Topping

  • 1/2 cup flour
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 cup melted butter

Blueberry Muffins

  • 1 1/2 cup flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 lemon zest
  • 1 orange zest
  • 1 egg
  • 1/3 cup melted butter
  • 2/3 cup buttermilk
  • 2 cup blueberries

Instructions

Crumb Topping

  • Whisk 1/2 cup flour, 1/2 cup sugar and 1 tsp cinnamon.
  • Add 1/4 cup melted butter.
  • Mix with a fork until crumbs form.
  • Chill in the refrigerator.

Blueberry Muffins

  • Preheat oven to 375.
  • Whisk 1 1/2 cup flour, 3/4 cup sugar, 2 tsp baking powder, 1/4 tsp salt, lemon zest and orange zest.
  • In a separate bowl, mix 1 egg, 2/3 cup buttermilk and 1/3 cup melted butter. (It's okay if it looks lumpy)
  • Add the wet ingredients to the dry. (Do not overstir)
  • Fold 2 cups of blueberries into the mix.
  • Insert 12 muffin liners into muffin tin.
  • Spread mix evenly into 12 muffin liners.
  • Sprinkle crumbs on top.
  • Bake for 28 minutes
  • Cool for 30 minutes before serving.
