Thai Chicken Soup
Ingredients
- 2 1/2 lbs chicken thighs
- 1 red bell pepper
- 1 sliced red onion
- 2 chopped carrots
- 4 tbsp peant butter
- 2 tbsp red curry paste
- 2 cans coconut milk 13.5 ounces
- 2 cups chicken broth
- 2 tbsp fish sauce
- 2 tbsp honey
- 4 tsp ginger
- cilantro garnish
- lime garnish
Instructions
- Mix 4 tbsp peanut butter, 2 tbsp red curry paste, 2 cans coconut milk, 2 cups chicken broth, 2 tbsp fish sauce and 2 tbsp honey in the crockpot.
- Cut 2 1/2 lbs chicken thighs.
- Slice 1 red bell pepper.
- Slice 1 red onion.
- Chop 2 carrots.
- Add chicken thighs, red bell pepper, red onion, carrots and 4 tsp ginger to the crockpot.
- Cook on low for 8 hours.
- Shred chicken.
