Enchilada Casserole
Ingredients
Crust
- 4 oz cream cheese room temperature
- 2 eggs
- 1/2 tsp taco seasoning
- 6 oz shredded cheddar cheese
Stuffing
- 1 lb ground meat
- 1 onion
- 2 tbsp taco seasoning
- 3 tbsp tomato paste
- 8 oz shredded pepper-jack cheese
Instructions
Crust
- Preheat oven to 350.
- Whisk 2 eggs and 4 oz cream cheese until smooth.
- Mix in 1/2 tsp taco seasoning.
- Mix in 8 oz shredded cheddar cheese.
- LIne a 9×13 baking dish with parchment paper.
- Spread the cheese mixture in the pan.
- Bake for 35 minutes.
- Remove from oven for 10 minutes before adding the topping.
Topping
- Heat a skillet over medium-high heat.
- Dice the onion.
- Brown the 1 lb hamburger and onion in the skillet.
- Drain the fat.
- Mix in the 3 tbsp tomato paste.
- Spread over the crust.
- Top with 8 oz shredded pepper-jack cheese.
- Bake for another 20 minutes.
