Ingredients

Shredded Chicken

  • 2 boneless chicken breasts
  • 1/2 cup chicken broth

Buffalo Chicken Quesadilla

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp butter
  • 1/3 cup Frank's Red Hot Sauce
  • 1 cup shredded chicken

Instructions

Shredded Chicken

  • Add 2 bonelss chicken breasts and 1/2 cup chicken broth to the slow cooker.
  • Cook on high for 4 – 5 hours or low for 6 – 8 hours. For best results cook on low.
  • Shred the chicken.

Buffalo Chicken Quesadilla

  • Preheat oven to 400.
  • Place parchment paper on pizza pan.
  • Place 1 cup shredded cheddar cheese and 1 cup shredded mozzarella cheese on the pizza pan.
  • Mix the cheeses together and spread out into a thin layer. There should be very limited cheese overlapping on the pan.
  • Bake for 7 minutes.
  • Melt the 2 tbsp butter in the microwave.
  • Mix the 1/3 cup Frank's Red Hot Sauce in the meleted butter.
  • Mix 1 cup shredded chicken in the buffalo sauce mixture.
  • Take the baked cheese out of the oven
  • Spread the buffalo chicken over half the cheese shell.
  • Fold the cheese shell in half.
  • Bake for an additioanl 5 minutes.
