Mustard Chicken & Veggies

Ingredients

  • 2 lbs boneless chicken thighs
  • 2 sweet potatoes
  • 1 red onion
  • 3 carrots
  • 3 celery stalks
  • 3 tbsp whole grain mustard
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • salt
  • pepper

Instructions

Chicken

  • Preheat oven to 400.
  • Pat dry the chicken.
  • Cut the chicken into bite sized pieces.
  • Whisk 3 tbsp whole grain mustard, 2 tbsp soy sauce and pepper in a bowl.
  • Mix chicken and sauce.

Veggies

  • Peel 2 sweet potatoes.
  • Dice 2 sweet potatoes, 1 red onion, 3 carrots and 3 celery stalks.
  • Cover a roasting pan. with aluminum foil.
  • Mix vegetables, 3 tbsp olive oil, 1 tbsp dried thyme, 1 tbsp dried rosemary and salt & pepper to taste.
  • Add chicken to veggie pan.
  • Cook for 30 – 40 minutes.
