Rice Stuffing
Ingredients
- 1 red onion
- 3 celery stalks
- 16 oz baby bella mushrooms
- 2 1/2 cup brown or wild rice
- 5 1/2 cup chicken broth
- 2/3 cup cranberries
- 1 tbsp rosemary
- 1 tbsp thyme
- 1/2 cup slivered almonds
Instructions
- Dice 1 red onion.
- Thinly slice 3 celery stalks.
- Saute red onion and celery over medium-high heat for 8 minutes.
- Add mushrooms.
- Saute for an additional 6 minutes.
- Mix 2 1/2 cup brown or wild rice and 5 1/2 cup chicken broth in slow cooker.
- Add sauteed vegetables.
- Cook on low for 5 to 6 hours.
- Turn off slow cooker.
- Mix in 2/3 cup cranberries, 1 tbsp rosemary, 1 tbsp thyme and 1/2 cup slivered almonds.
- Cover and let stand for 10 minutes.
