Pasta E Fagioli
Ingredients
- 1 1/2 lbs ground meat
- 1 red onion
- 1 tbsp minced garlic
- 2 celery sticks
- 2 carrots
- 14.5 oz can diced tomatoes
- 15 oz can red kidney beans
- 15 oz can great northern beans
- 1 cup tomato sauce
- 1 1/2 cup beef broth
- 4 tsp white wine vinegar
- 1 tsp basil
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 6 oz pasta optional
Instructions
- Brown 1 1/2 lbs ground beef in a large saucepot.
- Dice red onion.
- Chop 2 celery sticks.
- Chop 2 carrots.
- Saute vegetables and 1 tbsp minced garlic with the cooked beef for 12 minutes.
- Drain the red kidney beans and great northern beans.
- Add can diced tomatoes, red kidney beans, great northern beans, 1 cup tomato sauce, 1 1/2 cup beef broth, 4 tsp white wine vinegar, 1 tsp basil, 1 tsp oregano, 1 tsp thyme, 1 tsp salt and 1/2 tsp black pepper into the pot.
- Simmer for 30 minutes.
- Serve with pasta and parmesan cheese.
