
Blueberry Muffins
Ingredients
Crumb Topping
- 1/2 cup flour
- 1/2 cup sugar
- 1 tsp cinnamon
- 1/4 cup melted butter
Blueberry Muffins
- 1 1/2 cup flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 lemon zest
- 1 orange zest
- 1 egg
- 1/3 cup melted butter
- 2/3 cup buttermilk
- 2 cup blueberries
Instructions
Crumb Topping
- Whisk 1/2 cup flour, 1/2 cup sugar and 1 tsp cinnamon.
- Add 1/4 cup melted butter.
- Mix with a fork until crumbs form.
- Chill in the refrigerator.
Blueberry Muffins
- Preheat oven to 375.
- Whisk 1 1/2 cup flour, 3/4 cup sugar, 2 tsp baking powder, 1/4 tsp salt, lemon zest and orange zest.
- In a separate bowl, mix 1 egg, 2/3 cup buttermilk and 1/3 cup melted butter. (It's okay if it looks lumpy)
- Add the wet ingredients to the dry. (Do not overstir)
- Fold 2 cups of blueberries into the mix.
- Insert 12 muffin liners into muffin tin.
- Spread mix evenly into 12 muffin liners.
- Sprinkle crumbs on top.
- Bake for 28 minutes
- Cool for 30 minutes before serving.
