Aloha Chicken

Ingredients

  • 2 lbs boneless chicken thighs
  • 1 red onion
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1/2 pineapple
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp olive oil
  • 2 tsp rice vinegar
  • 2 tsp minced garlic
  • 1 tsp ginger
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • shredded coconut optional

Instructions

  • Preheat the oven to 350.
  • Slice the chicken, red onion, red bell pepper and orange bell pepper.
  • Dice the pineapple.
  • Combine the chicken, red onion, red bell pepper, orange bell pepper, pineapple, 2 tbsp soy sauce, 1 tbsp honey, 2 tsp olive oil, 2 tsp rice vinegar, 2 tsp minced garlic, 1 tsp ginger, 1/2 tsp salt and 1/4 tsp black pepper in a casserole dish.
  • Bake for 20 minutes.
  • Optional: Serve with coconut rice and shredded coconut on top.
