Aloha Chicken
Ingredients
- 2 lbs boneless chicken thighs
- 1 red onion
- 1 red bell pepper
- 1 orange bell pepper
- 1/2 pineapple
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 tsp olive oil
- 2 tsp rice vinegar
- 2 tsp minced garlic
- 1 tsp ginger
- 1/2 tsp salt
- 1/4 tsp black pepper
- shredded coconut optional
Instructions
- Preheat the oven to 350.
- Slice the chicken, red onion, red bell pepper and orange bell pepper.
- Dice the pineapple.
- Combine the chicken, red onion, red bell pepper, orange bell pepper, pineapple, 2 tbsp soy sauce, 1 tbsp honey, 2 tsp olive oil, 2 tsp rice vinegar, 2 tsp minced garlic, 1 tsp ginger, 1/2 tsp salt and 1/4 tsp black pepper in a casserole dish.
- Bake for 20 minutes.
- Optional: Serve with coconut rice and shredded coconut on top.
