Almond Crusted Chicken

Ingredients

  • 2 lbs boneless chicken thighs
  • 2 slices bread
  • 3 oz almonds
  • 1/3 cup parmesan cheese
  • 1/2 tsp garlic powder
  • 1 tsp thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1 tbsp water

Instructions

  • Preheat oven to 400.
  • LIghtly toast 2 slices of bread.
  • Pulse 2 slices of toast, 3 oz almonds, 1/3 cup parmesan cheese, 1/2 tsp garlic powder, 1 tsp thyme, 1/2 tsp salt and 1/4 tsp black pepper in a blender into crumbs.
  • Mix 1 egg and 1 tbsp water in a bowl.
  • Place a portion of the bread crumbs on a plate.
  • Dip one piece of chicken into the egg and then bread crumbs.
  • Place chicken on a baking sheet lined with parchment paper.
  • Repeat for all pieces of chicken.
  • Bake for 9 minutes.
  • Flip the chicken.
  • Bake for an additional 9 minutes.
