Preheat oven to 400.
LIghtly toast 2 slices of bread.
Pulse 2 slices of toast, 3 oz almonds, 1/3 cup parmesan cheese, 1/2 tsp garlic powder, 1 tsp thyme, 1/2 tsp salt and 1/4 tsp black pepper in a blender into crumbs.
Mix 1 egg and 1 tbsp water in a bowl.
Place a portion of the bread crumbs on a plate.
Dip one piece of chicken into the egg and then bread crumbs.
Place chicken on a baking sheet lined with parchment paper.
Repeat for all pieces of chicken.
Bake for 9 minutes.
Flip the chicken.
Bake for an additional 9 minutes.
