Thai Chicken Soup

Ingredients

  • 2 1/2 lbs chicken thighs
  • 1 red bell pepper
  • 1 sliced red onion
  • 2 chopped carrots
  • 4 tbsp peant butter
  • 2 tbsp red curry paste
  • 2 cans coconut milk 13.5 ounces
  • 2 cups chicken broth
  • 2 tbsp fish sauce
  • 2 tbsp honey
  • 4 tsp ginger
  • cilantro garnish
  • lime garnish

Instructions

  • Mix 4 tbsp peanut butter, 2 tbsp red curry paste, 2 cans coconut milk, 2 cups chicken broth, 2 tbsp fish sauce and 2 tbsp honey in the crockpot.
  • Cut 2 1/2 lbs chicken thighs.
  • Slice 1 red bell pepper.
  • Slice 1 red onion.
  • Chop 2 carrots.
  • Add chicken thighs, red bell pepper, red onion, carrots and 4 tsp ginger to the crockpot.
  • Cook on low for 8 hours.
  • Shred chicken.
