Equipment

  • Roasting Pan (preferred but not required)
  • Meat thermometer

Ingredients

  • 3 lb standing rib roast
  • 5 tbsp butter
  • 3 sprigs thyme
  • 3 sprigs rosemary
  • 5 cloves minced galric
  • salt
  • 1/2 tsp black pepper

Instructions

  • Set 3 lb standing rib roast on the counter for 2 to 3 hours.
  • Preheat oven to 450.
  • Pat dry the standing rib roast with a paper towel.
  • Mix together 5 tbsp butter, 3 spring thyme, 3 sprigs rosemary, 5 cloves minced garlic, 1 tsp salt and 1/2 tsp black pepper.
  • Spread butter mixture on the bone side (bottom) of the rib roast.
  • Place the rib roast in the roasting pan.
  • Spread butter over the entire roast, leaving some butter for later.
  • Generously salt the top of the roast.
  • Bake for 20 minutes.
  • Reduce heat to 250.
  • Spread the remaining butter over the roast.
  • Bake for 1 hour and 10 minutes.
  • Check the temperature of the middle of the roast.
    115 for Rare / 118 for Medium Rare / 123 for Medium / 127 for Medium Well Done
  • Pull the roast from the oven and cover with lossley with alumunium foil.
  • Let the roast sit for 25 minutes.
  • Carve against the grain and serve.
