Set 3 lb standing rib roast on the counter for 2 to 3 hours.
Preheat oven to 450.
Pat dry the standing rib roast with a paper towel.
Mix together 5 tbsp butter, 3 spring thyme, 3 sprigs rosemary, 5 cloves minced garlic, 1 tsp salt and 1/2 tsp black pepper.
Spread butter mixture on the bone side (bottom) of the rib roast.
Place the rib roast in the roasting pan.
Spread butter over the entire roast, leaving some butter for later.
Generously salt the top of the roast.
Bake for 20 minutes.
Reduce heat to 250.
Spread the remaining butter over the roast.
Bake for 1 hour and 10 minutes.
Check the temperature of the middle of the roast.115 for Rare / 118 for Medium Rare / 123 for Medium / 127 for Medium Well Done Pull the roast from the oven and cover with lossley with alumunium foil.
Let the roast sit for 25 minutes.
Carve against the grain and serve.
