Ingredients

Crust

  • 4 oz cream cheese room temperature
  • 2 eggs
  • 1/2 tsp taco seasoning
  • 6 oz shredded cheddar cheese

Stuffing

  • 1 lb ground meat
  • 1 onion
  • 2 tbsp taco seasoning
  • 3 tbsp tomato paste
  • 8 oz shredded pepper-jack cheese

Instructions

Crust

  • Preheat oven to 350.
  • Whisk 2 eggs and 4 oz cream cheese until smooth.
  • Mix in 1/2 tsp taco seasoning.
  • Mix in 8 oz shredded cheddar cheese.
  • LIne a 9×13 baking dish with parchment paper.
  • Spread the cheese mixture in the pan.
  • Bake for 35 minutes.
  • Remove from oven for 10 minutes before adding the topping.

Topping

  • Heat a skillet over medium-high heat.
  • Dice the onion.
  • Brown the 1 lb hamburger and onion in the skillet.
  • Drain the fat.
  • Mix in the 3 tbsp tomato paste.
  • Spread over the crust.
  • Top with 8 oz shredded pepper-jack cheese.
  • Bake for another 20 minutes.
