Ingredients

  • 2 lbs boneless chicken thighs
  • 1 cup ricotta cheese
  • 1/2 cup parmesan
  • 1 egg
  • 1 tbsp italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups marinara
  • 1 cup mozzarella
  • basil (optional)

Instructions

  • Preheat oven to 400
  • Mix 1 cup ricotta, 1/2 cup parmesan, 1 egg, 1 tbsp Italian Seasoning, 1/2 tsp salt and 1/4 tsp black pepper in a bowl.
  • Pat dry the chicken breast.
  • Salt and pepper each side of the chicken breast.
  • Place chicken breasts in the casserole dish.
  • Spread 1 cup of marinaria over the chicken breasts.
  • Spread the ricotta mixture over the chicken breasts.
  • Spread the remaining 1 cup of marinara over the chicken breats.
  • Spread the 1 cup mozzerlla over the chicken breasts.
  • Bake for 30 minutes.
  • Optional: Serve with Basil.
