Heat skillet with 4 tbsp butter and 3 tbsp coconut oil on medium-high heat.
Cut each boneless chicken breast in 1/2 down the side.
Beat each boneless chicken breast with a mallet.
Mix 1 egg and 1 tbsp water in a bowl.
Mix 1 tsp salt and 1 tsp black pepper to the egg mixture.
Place 1/2 cup shredded cheese on a plate.
Dip a piece of chicken in the egg mixture.
Dip the chicken with egg onto the cheese.
Sprinkle some cheese on top.
Flip the chicken over onto the cheese and repeat.
Add cheese to the plate as necesssary.
Place the chicken in the skillet and cook each side for 3 to 4 minutes.
