
Shrimp Scampi

Ingredients
- 1 lb shrimp peeled and deveined
- 1 whole lemon for the juice
- 1/2 cup dry white wine
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves minced garlic
- 1 tsp kosher salt
- 1 tsp black pepper
Instructions
- Heat skillet with 2 tbsp butter and 1 tbsp olive oil on medium-high.
- Add 2 tbsp minced garlic and cook for 1 minute
- Season the shrimp with 1 tsp kosher salt & 1 tsp black pepper.
- Cook shrimp till they turn pink (3 to 5 minutes depending on size)
- Remove shrimp from the pan (leave butter and oil in the pan).
- Boil 1/2 cup dry white wine and 1 lemon juice in the skillet.
- Return the shrimp to the pan.
- Mix all ingredients.
- Serve over pasta or by itself.
